Pancit Molo: Iloilo Wonton Soup

Filipino Classics
Small pork-and-shrimp dumplings make Pancit Molo substantial without needing a tangle of noodles. Shredded chicken fills out the broth, while crisp garlic and a little of its cooking oil bring a fragrant finish to each bowl just before serving.
About This Recipe
Local name: Pancit Molo
Chicken first simmers with onion, crushed garlic, and seasoning, then comes out to be shredded. The dumpling filling has its own minced garlic and scallions, with soy sauce, fish sauce, and sesame oil mixed into the pork and chopped shrimp.
Thin wonton wrappers need a modest amount of filling and clean, moistened edges to close securely. Cook the dumplings in batches at a gentle simmer rather than crowding and stirring a full pot. Keep the toasted garlic separate until serving so its crispness survives the broth.
Ingredient Notes
Dumpling wrappers
Use thin square wonton wrappers. Keep them covered with a towel so the edges do not dry out.
Ground pork
A little fat keeps the dumplings juicy. Very lean pork makes a bouncy but drier filling.
Shrimp
Chop it finely by hand so you get sweetness and texture rather than a paste.
Toasted garlic
Garlic oil and crisp garlic are a signature finish; add them right before serving.
Cooking Notes
- Keep unused wonton wrappers covered while you fill each batch. Dry edges resist sealing, so moisten only the edges of the wrapper you are currently shaping.
- Lift the sliced garlic from its oil when pale gold, as directed. Keep both components: the crisp slices and flavored oil are separate parts of the soup's finishing seasoning.

- 8 garlic cloves, thinly sliced
- 3 scallions, sliced
- Calamansi or lime wedges
Instructions
- Simmer the chicken, stock, onion, crushed garlic, fish sauce, salt, and pepper for about 30 to 35 minutes, until the thickest chicken meat reaches 165 F away from bone.
- Remove the chicken. Strain the broth if you want it very clear, then return the broth to the pot.
- Shred the chicken into bite-size pieces and reserve it for finishing the soup.
- Mix pork, shrimp, minced garlic, scallions, soy sauce, fish sauce, sesame oil, and black pepper until slightly sticky.
- Place about 2 teaspoons filling in the center of each wonton wrapper. Moisten the edges, fold into a triangle, then pinch the corners together.
- Heat oil and sliced garlic in a small pan over medium-low heat. Cook, stirring, until the garlic is pale gold. Transfer garlic to a plate and save the oil.
- Bring the broth to a gentle simmer. Cook dumplings in batches, starting to check at 4 to 5 minutes; the wrappers should be tender and the center of the filling must reach 160 F (165 F if using the minced-chicken substitution). Lift cooked dumplings into six serving bowls, eight per bowl.
- Return the shredded chicken to the broth and simmer until it reaches 165 F. Lift the chicken into the six serving bowls. With all solids removed, carefully measure the hot broth in a heatproof jug in manageable batches. Return it to the pot and add boiling water to bring the finished volume to 9 cups.
- Taste and adjust with fish sauce, salt, and pepper.
- Immediately ladle 1 1/2 cups broth into each bowl, avoiding further simmering that would reduce the measured volume. Finish with garlic oil, toasted garlic, scallions, and calamansi.
Nutrition Estimate

- Use small fillings: Overfilled dumplings split open and cloud the broth.
- Simmer gently: A low simmer cooks the wontons without tearing the wrappers.
- Freeze flat: Freeze uncooked dumplings on a sheet pan, then bag them once solid.
- Finish fresh: Add toasted garlic and scallions at the table for the best aroma.

Common Questions
Why is it called pancit if there are no noodles?
The thin dumpling wrappers replace noodles in this Iloilo soup, which is why it keeps the pancit name.
Can I use store-bought stock?
Yes. Choose a low-sodium chicken stock and adjust fish sauce at the end.
Can I skip shrimp?
Yes. Replace it with more ground pork or finely minced chicken.
Can Pancit Molo be made ahead?
The broth and dumplings can be made ahead, but cook the dumplings close to serving so they stay tender.
Why are my Pancit Molo dumplings opening in the broth?
Check for overfilling, dry wrapper edges, or trapped air around the filling. Moisten and press the edges together firmly, then maintain a gentle simmer so the wrappers are not battered by a rolling boil.
Should the shredded chicken cook inside the wonton wrappers?
No. Pork and shrimp make the dumpling filling. The separately poached chicken is shredded and returned to the soup after the dumplings cook, keeping the two components distinct in each bowl.
